WWAW

No that is not a typo. WWAW stands for Weight Watchers at Work. I joined last week just for the extra motivation and accountability. Plus, since I have the hospital insurance, I get reimbursed 80% up to $500 yearly. How can you beat that?!? So for my first weigh in today, I am down 1.6 pounds. So that is a start.
I also subscribe to the WW magazine. I found a recipe that sounded good so I decided to try it out. I made it tonight and it was yummy! Kylee even ate it! This is what we had:


How yummy does that look?!? Here is the S.I.M.P.L.E recipe:

Cajun Fish:

2 Tbsp all-purpose flour

1 tsp Cajun or Creole seasoning (I used Cajun)

1/8 tsp salt

1/8 tsp pepper

4 (5-oz) skinless Tilapia or catfish fillets (I used Tilapia)

2 tsp olive oil

Lemon wedges (forgot these but would have been good!)

1. Mix the flour, seasoning, salt, and pepper on a sheet of wax paper.

2. Working with one fillet at a time, place it skin side down in the flour mixture to coat one side only;press the top so that the mixture adheres.

3. Heat the oil in a large nonstick skillet over medium-high heat. Add fillets, floured side down. reduce the heat to medium; cover and cook just until the fillets are opaque in the center, 4-6 minutes. Serve with the lemon wedges.
